Bar Masa and Shaboo

For the first time, Michelin three-star and Mobil five-star chef Masayoshi Takayama will bring his unrivaled mastery of Japanese cuisine to Las Vegas at ARIA.  The restaurant is divided into two unique spaces that offer different styles of service and cuisine. Bar Masa is a modern Japanese restaurant in which guests can order Chef’s legendary works of art from an à la carte menu. The second space, Shaboo, will offer an exclusive and intimate dining experience. Shaboo will feature Masa’s signature omakase style, for which he intricately designs a set menu using only the best seasonal ingredients available that is served to every guest. Masa composes dishes that celebrate the simplicity of each ingredient, maintaining their pure essences. Diners will enjoy fresh seafood flown in from Japan and a collection of hard-to-find high-end sake. An experience that is both delectable and entertaining, guests will wait with anticipation as course after course of Masa’s renowned cuisine is presented to them.



Sage

Chef Shawn McClain, best known for acclaimed Chicago restaurants Spring, Green Zebra and Custom House, will debut the first restaurant outside of his Midwestern hometown at ARIA. Named Best Chef Midwest by the James Beard Foundation in 2006 and “Chef of the Year” by Esquire magazine in 2001, McClain will incorporate influences from each of his renowned concepts into Sage at ARIA. Sage will spotlight farm-to-table produce, artisanal meats and sustainable seafood with a strong emphasis on simple, clean flavors presented in a modern artful way.



AMERICAN FISH

AMERICAN FISH at ARIA is inspired by the bounty of America’s great lakes, rivers and coasts with a menu featuring refined American cuisine by Chef Michael Mina. The menu will offer fish and shellfish harvested primarily from U.S. waters, fresh and salt, complemented with classic side dishes. Signature cooking methods will include salt-baking, charcoal grilling, cast iron-griddling, cedar plank-smoking and poaching in ocean water. The menu also will feature a wide array of well-sourced meats. Many products will be purchased directly from fishermen, farmers and ranchers allowing diners to enjoy regional dishes they might not otherwise experience. The restaurant will emphasize a blend of modern-day sophistication and design combined with the rustic charm of a 19th century American lodge with masculine touches such as warm woods and leather accents.  



Julian Serrano

At his namesake restaurant, Chef Julian Serrano will stretch the normal boundaries of small plates featuring both traditional and innovative interpretations of Spanish fare. The expansive seafood will highlight fresh shellfish and ceviches, while the dining room and lounge will serve tapas and other dishes from Chef Serrano’s native Spain. This more casual restaurant will share a new side of Chef Serrano and feature various menus at different price points, providing diners with an accessible and flexible dining experience.



Jean Georges Steakhouse

World-renowned Michelin three-star, James Beard Award-winning Chef Jean-Georges Vongerichten will deliver a modern, global approach to a steakhouse at his eponymous restaurant. The menu will feature the highest-quality meat from around the world from places such as Japan, Argentina and Uruguay; crudo, fish and unexpected side dishes and sauces. The condiments will be innovative, ranging from homemade steak sauces and mustards to rubs, spices and flavored salts that are served with the meats. Featuring an inventive wine “forest,” the energy of the central bar and lounge will extend through the restaurant, acting as the heart of the space.



Sirio’s Ristorante

Michelin one-star, Mobil five-star restaurateur Sirio Maccioni will introduce a classic Italian masterpiece with Sirio’s Ristorante at ARIA. The menu is inspired by the traditional Italian dishes that shaped his life, such as Veal Milanese, Osso Buco and pasta dishes like grandmother used to make, while the cocktails include the perfect Negroni as well as other Italian libations. The wine list will feature one of Las Vegas’ largest selections of Italian vintages at a wide array of price points. The restaurant will channel old-time Italy with its fantastical, Fellini-esque décor.





Union Restaurant & Lounge

Created by The Light Group, Union Restaurant & Lounge will serve a creative and playful dinner menu featuring contemporary American cuisine. Executive Chef Brian Massie will offer unique interpretations of American favorites in a cutting-edge environment that enhances the culinary experience. Located in the epicenter of ARIA’s casino floor, Union’s unique interiors, by renowned designer Adam Tihany, will allow guests to enjoy a meal within a hip and open layout. A series of strategically positioned floor-to-ceiling architectural "trees", bathed in natural tones, will give the open space a greater sense of seclusion and intimacy.



Jean Philippe Pâtisserie

Open daily: 6 a.m. – 11 p.m.

World-renowned pastry Chef Jean-Philippe Maury introduces Jean Philippe Pâtisserie at ARIA. With ample seating in the relaxing café adjacent to the high-energy retail area, guests can enjoy their just desserts right away and scope out which treats – all of which look as good as they taste – to eat next. Breakfast pastries, gourmet sandwiches, freshly made crêpes, salads and paninis also will be featured. Jean-Philippe Maury’s signature chocolates will be on display and exquisitely packaged to take home as a tasty remembrance of the visit. Guests also can hand-select their favorites to create a custom box of treats that is uniquely them.



Blossom

When guests enter Blossom, it will be as if they’re walking into an enchanted Chinese garden; an escape into paradise. Guests can enjoy authentic Chinese cuisine in a lush atmosphere.  Blossom will celebrate the richness of Chinese culture with delicate details punctuated by non-traditional vibrant colors. Guests will arrive into the restaurant via an inclining curved wooden walkway. From the top, they can select from four distinct dining experiences within the garden setting: a sunken trellised garden, a single curved banquette surrounded by a bird cage-like enclosure, perimeter dining with a view of the entire restaurant or semi-private dining rooms.



Lemongrass

Designed by James Beard Award-winner AvroKo, Lemongrass will be the first Thai restaurant on the Las Vegas Strip. Lemongrass will offer a modern interpretation of Thai cuisine and feature a bar and lounge, and two private dining rooms. Guests can enjoy a wide variety of authentic Thai cooking, such as Papaya Salad, Pad Thai and traditional Thai curries. An interactive satay bar will feature charcoal-grilled beef, poultry, pork and seafood skewers served with a variety of seasonings. Lemongrass’ executive chef, who has amassed vast culinary credentials in Thailand, will bring international flavor to the cuisine with a modern Asian twist.  



Café Vettro

Open 24 hours daily

Café Vettro will serve three meals daily with a contemporary selection of menu items. Guests can enjoy its modern and inventive décor, including garden areas and stone cliffs. A 40-foot-ceiling with floor-to-ceiling windows will give the space an open and airy feel, with multiple levels for a terraced effect.



The Buffet

Open daily for breakfast, lunch and dinner: 7 a.m. – 10 p.m.

A variety of tempting selections, brought together in one unique setting. The Buffet at ARIA will feature an interior unlike any restaurant of its kind. Located on the pool level, natural light will illuminate the space through large windows that afford extraordinary views of ARIA’s pool deck. To maximize the vantage point from every table, half of the floor will be elevated to provide unobstructed views to those sitting furthest from the windows. One of The Buffet’s most striking design elements is its custom ceiling, which will fold and change from one end of the space to the other. Wrapped in sustainable shear fabric, the undulating feature will create a series of smaller, more intimate dining areas while providing the illusion of sitting within a cloud, complete with dramatic chandeliers that replicate stars in the galaxy. The Buffet will offer a variety of delicious selections, available at eight food stations.



SKYBOX Sports Bar & Grill

The cutting-edge SKYBOX Sports Bar & Grill will be a fully integrated bar, grill and To Go area located inside the Race and Sports Book area – the first of its kind. Guests can cheer for their favorite teams on high-definition TVs and screens, place bets at stations in the adjacent Race and Sports Book and settle in for the biggest moments in sports. From late-night cravings to early morning breakfasts, SKYBOX will cater to it all. The menu will be the “best of the best” of neighborhood bar items.



Roasted Bean

For those on the go, guests can visit the Roasted Bean for their favorite specialty coffees and teas.



Sweet Chill

Open daily: 7 a.m. – 11 p.m.

At Sweet Chill, guests can indulge in good old fashioned ice creams, sorbets, gelatos and paninis. Like a swirl of multi-flavored ice cream, Sweet Chill’s interior will portray one continuous gesture, with ribbon-like pink, orange and bright-lime curved walls flowing into the ceiling. Colorful butterfly chairs will maintain the palette and complement the curvy and sensuous venue





NIGHTLIFE



Haze Nightclub

Conceptualized and designed to mirror the success of existing Light Group venues, Haze Nightclub will be a colossal cutting-edge space in which guests will be challenged to question their sense of perception and reality. Designed by award-winning interior design firm, ICRAVE, the nightclub will feature large hanging props over the entryway that will draw guests to a grand staircase transporting them to the mezzanine level where they will enjoy a bird’s-eye view of the action below. The main dance floor will peer up at a wall of interactive projection screens spanning 100 feet on a performance structure where impromptu acts by world-renowned artists regularly will take place. Suede walls and plush surfaces will define the weaving interior, including a unique two-story wall of lights incorporating the latest in technology coupled with a one-of-a-kind sound system designed by John Lyons Systems.
