World Tea Expo
I think I know what the secret ingredient is that people put into their
food. Many a chef, when asked about their delicious dishes say that that
it is a secret ingredient that has been in the family for years, but
will not tell you what it is. All you know is that it is something
special. Could it be that the secret ingredient is tea?

After attending the World Tea Expo a few weeks ago at Mandalay Bay,
where some of the top chef’s in Las Vegas gave cooking classes, I know
that the secret ingredient is tea because that is what all of the Chef’s
used in the recipes. The food was different and unique.
The first food demo was given by Michael Minor, Executive Chef of Border
Grill at Mandalay Bay Resort. Mike Minor has many years of experience
and his love of cooking started with his grandmother. He has worked for
celebrity Chef Wolfgang Puck and is now working for Susan Feniger and
Mary Sue Milliken of Border Grill and Food Network fame “Too Hot

Susan Feniger sat in the audience proudly watching Mike and Rob cooking
“Hawaiian Opah Ceviche” with Shangri La Organic Lemon Myrtle Tea.

Their second dish was “Capirotada” a Spanish bread pudding with house
made Organic Chai ice cream and caramel. We had the opportunity to taste
these dishes and they were absolutely delicious.

Chefs and restaurant owners, Susan and Mary Sue, have a new TV series,
Tamales’ World Tour, that focuses on different countries, with local
food, travel and tips. In between their busy travels they stop into
their restaurants in Las Vegas and California and say hello to their
fans. If you stop in and sample their food and you just might get to see
and get a chance to chat with them.
Next Chef was Claude Cevasco, Chef Instructor of the Le Cordon Bleu
Culinary Arts School in Las Vegas. He served as Director of Food and
Beverage for the Mirage Group’s Treasure Island Resort, Harrods in
London and the Ritz in Paris.

Chef Christophe Sorel is from France and has been an instructor at Le
Cordon Bleu for 5 years.

Their first dish was Shrimp with Organic BioChai Tea Sauce. Not only did

Their second dish was a Strawberry Soup with Lychee and Organic Green
Jasmine Tea. I don’t know where they come up with these recipes. All I
know is that they have never shown up in my kitchen and I wish they
would have because the dishes were delicious. Nicolas Giannola cooked
with the masters and he shared his love of cooking with us. He had just
graduated the night before the event and was very excited to start his
career as a Chef in Florida.

Another interesting fact if that Green Tea imports have increased by
118% and tea sales are expected to exceed $10 billion in 2010.
There were teas from all over the world and I met so many interesting
people at the World tea Expo. A group from Nairobe has a family business
in the States.

I found the entire Tea Expo to be a learning experience and a time to
test the many teas from around the world. Did you know that India was
the world’s largest tea producer and the largest tea consumer? Or that
tea is the second largest consumed drink in the world next to water.

And last but not least was the best photo of the day; a Teapot Car,
which greeted every attendee in the doorway as they walked into the
convention hall.

I asked the owners, Carol & Vince Weible of Carol’s Special-Teas in
Lompoc, CA, if they created a stir when driving the car and they said
they can't drive it on the streets because of the spout which obstructs
their view. It is a great looking car, a conversational piece, and a
reminder to drink your tea.
