Nightclub & Cabaret Gets High Grades for New Menu
This past week I enjoyed some pan roasted duck breast with spiced apple
and butternut Squash topped with an apple cider reduction. Then I
sampled airline chicken breast pan-roasted with mushroom fricassee with
a mesquite mix.

I enjoyed bruchetta on gourmet crustinis as well as a sampling of fresh
cheeses. For dessert, there were chocolate covered strawberries and
fresh fruit with a chocolate fountain. Oh, and the brownies were
delicious.

No, I didn’t dine at a five star strip restaurant. I was at Scores
Nightclub & Cabaret to taste some dishes from their revised menu and
meet the man who has changed dining at Scores, new Executive Chef, Josh
Green.

Chef Green spent the past three years as exclusive chef for the Gibson
Guitar Lounge at the Sundance Film Festival and is the personal chef for
Siegfried and Roy as well as Mixed Martial Artist Kimbo Slice. He has
experience, personality, ambition, and most importantly, the ability to
produce food offerings that have increased food sales at Scores more
than 100% in the last two months. Other menu offerings include Scallops,
Tiger Shrimp and Ahi Tuna, Malaysian Beef Skewers, Crudite Platters, and
breakfast offerings.
When you picture a Vegas Nightclub such as Scores, food may not be the
first thing that comes to mind, but according to Green, The clientele
include high end people that want good food”. He told me that, “I
created the menu because the people want it.”
Executive Chef of Scores seemed an unlikely choice of position for a man
who began his career in the fine dining scene of New York at age 16,
moved on to Disney World and then cooking for U2 and Bon Jovi. At
present, in addition to being Executive Chef for Scores, he is owner of
Green’s Gourmet, a personal chef and high-end catering business

I asked him what his goal is. “To be the biggest restaurateur in the
world.” Okay, how does Scores fit into the ambition? “I think of it as a
restaurant, nothing more.” Green said that working at Scores is, “a
fabulous opportunity to capitalize on the market.”
Green’s business partner, Dimetri Townsend added that they want to keep
staff and guests happy. “Before we arrived, the menu was about chicken
fingers and such. Hopefully, we can raise the bar overall for cabaret
dining.”
Scores, a 24/7 Gentlemen’s club is located on 3355 South Procyon at
Desert Inn in Las Vegas.
More than 300 dancers perform on three stages with noted local DJ’s
keeping the music coming. Like most Las Vegas Gentlemen’s clubs, there are
specials for locals, VIP membership services including concierge
services for groups of five or more, and a vast vintage wine collection
and premium cigar selection. When you visit, be sure to take your eyes
